Fresh raw oyster with tomato water and pepper; baked oyster with cream; scallop tostada on blue corn crisp with roasted corn silk. Rye whiskey old fashioned cocktail with jamon Iberico simple syrup.
Ice cream of fig three ways: fig fruit, fig leaf syrup, fig branch syrup. Garnished with a roasted hay infused foam; roasted walnut crust; fig leaf syrup drizzle.
